The red-fleshed variety can turn urine and stool pink — harmless, and not blood.
Dragon fruit is the most dramatic thing on the counter and one of the mildest to eat. The white-fleshed kind tastes faintly like a pear crossed with a kiwi. The magenta kind is sweeter and stains everything it touches. Don't expect a big flavour. What you get instead is a very low sugar load, plenty of water, and a group of carbohydrates called oligosaccharides that feed the helpful bacteria in your gut. It's a prebiotic in fruit form, which is rarer than it sounds.
Known to botanists as Selenicereus undatus.
