Bromelain is destroyed by canning. Only fresh pineapple carries it.
One cup covers more than a day's manganese, a mineral few people track and most need for bone.
The enzyme is why pineapple after a lamb dinner is more than a habit.
Ānānās came to the Persian table through imported-fruit markets, not local orchards. It's worth knowing for bromelain, a group of protein-digesting enzymes in the fresh flesh and stem. Bromelain has a real clinical record for swelling and may also help a heavy meal go down more easily.
Known to botanists as Ananas comosus.

Why It Matters
Very few things in a fruit bowl come with trial evidence. Bromelain does, for post-surgical swelling and sinus congestion, and you get it in a fruit people already enjoy.
Protein digestion can slow with age, just when many older adults are being asked to eat more protein. Fresh pineapple after a meat meal may offer a small, pleasant help, and its manganese is useful for bone health too.
It was used: trials in dental and general surgery found less swelling and pain with oral bromelain. Manganese in one cup exceeds the daily requirement, which matters for bone and for enzyme function.
Vitamin C at close to a full day's need in a cup.

What It Contains
Primary compounds
Bromelain, a mixture of protein-digesting enzymes concentrated in the stem and core. Manganese, unusually high for a fruit. Ferulic acid and vitamin C as the main antioxidants.
Vitamins
Vitamin B6, Folate, Thiamin
Other notable constituents
Minerals: Copper, Potassium · Fiber: About 2.3 g per cup

In the Laboratory
From laboratory work, not from people taking it
Bromelain breaks down protein, which is measurable in a test tube and noticeable after a heavy dinner.

What Studies in People Show
Early research
Bromelain preparations improved symptoms in acute sinusitis alongside standard care. Rated: early research. Bromelain eased knee pain and stiffness in small trials of mild osteoarthritis.Emerging evidence

Preparation and Kitchen Use
Fresh slices after a heavy meat meal, which is when the enzyme has something to work on.
Cut off the top and base, stand it up, and cut the skin away in strips.
Dig out the brown eyes with the tip of a knife rather than cutting deep.
The core is edible and holds the most bromelain, though it's tough. Chop it fine.
A ripe fruit smells sweet at the base and gives slightly when pressed.
Grill thick slices briefly and serve with cardamom cream.
Cubes in a salsa with cucumber and lime, served beside grilled fish.

Medicines and Interactions
General cautions
Medication interaction:
Large amounts or bromelain supplements within two weeks of surgery.
Specific medicines
Medication interaction:
Warfarin and other blood thinners — Bromelain has a mild blood-thinning action. Ordinary portions are fine; keep them steady and mention supplements to your clinic. (low concern)
Medication interaction:
Antibiotics (amoxicillin, tetracycline) — Bromelain can raise blood levels of some antibiotics. Space large amounts away from the dose. (low concern)

Who Should Be Careful
General caution:
The enzyme works on the mouth too. A lot of fresh pineapple leaves the tongue raw; rinse with water afterwards.
General caution:
Bromelain thins the blood mildly. Keep amounts ordinary in the two weeks before an operation.
General caution:
Tinned pineapple has no bromelain left. It is a sweet fruit and nothing more.
General caution:
Very unripe fruit is harsh on the stomach and on the mouth.

Pregnancy, Children and Older Adults
Pregnancy and breastfeeding
Pregnancy and breastfeeding:
Ordinary portions of fresh pineapple are fine in pregnancy. The old story about it bringing on labour comes from concentrated bromelain, not from a slice of fruit.
Children
Children:
Children often complain that pineapple stings. That is the enzyme on a small mouth. Serve less, and with yogurt.
Older adults
Older adults:
Cut it into small pieces and take the core out; the core is fibrous and hard on dentures even when the flesh is soft.

How It Is Traditionally Used
Persian temperament: Warm & Moist (1st degree). Warming and digestive. The effect belongs to fresh fruit only.
Modern Persian herbalism reads this newer fruit, ānānās, as warm and moist: digestive, opening, and helpful after rich food. Both traditional practice and laboratory findings point you toward fresh rather than tinned pineapple.
Pineapple reached Iran through twentieth-century import trade.
In the Household
Bromelain was isolated in the nineteenth century and has been sold as a digestive preparation since the 1950s.
The fruit entered Persian home use first as a tinned dessert, later as fresh fruit once air freight made it possible.
At modern Iranian celebrations, pineapple often appears in rings on the fruit platter beside melon and grapes. It says the table is generous and well stocked, even if it doesn't carry an old tradition.

What It Goes With
Herb:
Mint
Torn over cut pineapple. It lifts the sweetness and cools the sharpness.
Fruit:
Lime
A squeeze before serving stops the fruit tasting flat.
Spice:
Cardamom
Over grilled slices, with a spoon of thick cream.
Dairy:
Yogurt
Eat them together rather than blended. The enzyme thins a smoothie within minutes.

Through the Year
Spring:
Spring
Imported fruit is at its best in the spring months. Choose by smell.
Summer:
Summer
Cold pineapple with mint is one of the better answers to a hot evening.
Autumn:
Autumn
Good with grilled food while the weather still allows cooking outside.
Winter:
Winter
Available but expensive, and often picked too green to sweeten.

Questions People Ask
Why does my mouth sting?
Bromelain is digesting a little of the surface of your tongue. It's harmless and it stops. Rinsing with water or eating yogurt after helps.
Is tinned pineapple as good?
No. Heat destroys bromelain, so the tin gives you sugar, some vitamin C, and none of the reason to eat it.
Should I eat the core?
If you can manage it. It holds the most enzyme. Chop it small or blend it into a drink.
Does pineapple burn fat?
No. The enzyme digests protein in the gut, which is a different thing entirely.
